Paul & Pippa Biscuits get a mention in The New York Times by Florence Fabricant. She wrote the following about our delish cookies:

To Nibble; A Delicate Texture, a Bold Flavor.
Delicate is the word that best describes these Spanish cookies. The flavors, however, are anything but rich cocoa balanced with a touch of salt, apple seasoned with cinnamon, and lime with bits of candied peel are some of them. All the ingredients are organic: Paul and Pippa Biscuits.

Paul and Pippa is a family of friendly people who love natural stuff. They’re probably a bit like you if you’re also a fan of good times, having a gossip, meeting up with friends, travelling, and delicious, healthy food. At Paul and Pippa we are anti-monotony, stress, lies and bullying. Everyone in our family is unique but with one thing in common: living to be happy and to share with others, which is what really matters.

Who wants to eat artificial fat, colourings and sweeteners? Paul and Pippa don’t and as we couldn’t find what we wanted, we decided to make our own. That’s why we’ve come up with some delicious homemade biscuits that are also healthy and natural. Made with extra virgin olive oil, spelt flour and natural ingredients and juice. Free from fat, additives and colourings, they are organic, top quality, and classy at the same time. They taste good and you know what’s in them, which for us is what really matters.

The Chapter Collection is more than just a cracker to put cheese on. It’s a friend with whom to share those little moments that give meaning to everything. Along this journey you will discover craft cheeses, wines and other locally produced products with huge character and quality.

CHAPTERS 1 & 2 – Launched in May 2017

#1 BASIL AND QUINOA CRACKERS

Ingredients: Wheat flour (gluten), basil oil (9%), quinoa flour (4%), extra virgin olive oil (3%), salt and basil (0,6%).

We suggest them for your selection of Soft Cheese as: Feta, Mozzarella, Emmental, Manchego, Brie, Mascarpone, Gruyère, Burrata.

#2 HOT PAPRIKA CRACKERS

Ingredients: Wheat flour (gluten), extra virgin olive oil (12%), salt, and hot paprika (0,4%).

We suggest them for your selection of Hard Cheese as: Cheddar, Cured Manchego, Tête de Moine, Blue Cheese, Cream Cheese, Torta del Casar, Parmigiano Reggiano, Stilton.

#3 TRUFFLE

Ingredients: Wheat flour (gluten), extra virgin olive oil (7%), truffle oil (5%), and salt.

We suggest them for your selection of Soft Cheese as: Feta, Mozzarella, Emmental, Manchego, Brie, Mascarpone, Gruyère, Burrata.

#4 BLACK SALT & RICE

Ingredients: Wheat flour (gluten), extra virgin olive oil (12%), rice flour (2%), and black salt (2%).

We suggest them for your selection of Hard Cheese as: Cheddar, Cured Manchego, Tête de Moine, Blue Cheese, Cream Cheese, Torta del Casar, Parmigiano Reggiano, Stilton.

#5 JAMAICA PEPPER

Ingredients: Wheat flour (gluten), extra virgin olive oil (12%), salt, and Jamaica Pepper (1%).

We suggest them for your selection of Soft Cheese as: Feta, Mozzarella, Emmental, Manchego, Brie, Mascarpone, Gruyère, Burrata.

#6 RED MUSTARD

Ingredients: Wheat flour (gluten), extra virgin olive oil (13%), salt, and rice flour (2%).

We suggest them for your selection of Hard Cheese as: Cheddar, Cured Manchego, Tête de Moine, Blue Cheese, Cream Cheese, Torta del Casar, Parmigiano Reggiano, Stilton.

#7 SMOKED SALT

Ingredients: Wheat flour (gluten), extra virgin olive oil (12%), and smoked salt (2,4%).

#8 PINK PEPPER AND QUINOA

Ingredients: Wheat flour (gluten), extra virgin olive oil (12%), quinoa flour (4%), salt and pink peppercorns (2,4%).

We suggest them for your selection of Hard Cheese as: Cheddar, Cured Manchego, Tête de Moine, Blue Cheese, Cream Cheese, Torta del Casar, Parmigiano Reggiano, Stilton.

Lady Carrot Cake

Lady Carrot is as natural, fresh and tender as an organic carrot just out of the ground. But don’t let first impressions fool you: you’ll soon see that shes also bold and passionate. Her character is just as magical, sensual and captivating as the mix of aniseed, cinnamon, nutmeg, cardamom and black pepper that gives her spice.

She always walks the middle road between tradition and modernity – no time for fads. Dip her into a little mascarpone mixed with honey and you’ll see her eyes light up (and yours too). Passion at first bite!

Don Manchego

This guy is scrumptious and he knows it, but he also has the intense, piquant and daring hint of his more aged and cured version. he knows what he wants and he gets it every time: who can say no to someone who has all he flavor of life?

His favourite dates are always memorable and include a glass of good red wine and a little freshly sliced Iberian ham.

Legend has it that if you put those 3 ingredients together as an appitizer or snack, close your eyes and count to three, you can feel one of his mind blowing kisses!

Lime After Time

These lime biscuits are very independent. They always decide at the last minute what to do and how to live life to the full. With all their savoir faire they’re sure they’ll triumph wherever they go, because when it comes to being natural they really take the biscuit. Try them with a gin and tonic and some Spanish ham and they’ll get the party going. They might play hard to get, but they’re too good to resist.

Tomato Bravo

Mr Tomato is more sensitive than he looks, which is why he goes for healthy friendships. He’s more mature these days – more into feeling good without all the nonsense. That said, when he gets together with cured cheese it’s a party for the palate that’ll make your taste buds dance, and with a bit of red wine they might even burst into song. But he’s also happy in his own company – no pretence, just a big personality. And he knows how to live in the moment because he tastes great, which is what really matters.

Cocoa Chips

Mmm… this new snack is the coolest kid in the family: a fusion of cocoa in olive oil with a hint of salt flakes. Put a bit of foie on top and you’ll have all the urban hipsters and bloggers in the hood flocking to you.

Cheese Me

She looks hot but she’s feisty too – 100% beautiful Italian Parmesan with a cumin kick. She loves music and action, and with salmon and white wine she’s the life and soul. You’re bound to fall in love because she’s divine. You’re bound to get attached because her taste is unique – like all unique people she’s got that special something that draws you in.

Grandma & Me

Who doesn’t love the smell of a freshly baked cake? This taste tandem is a winner because it’s a match made in heaven. One is sweet and the other spicy; one is experienced and the other fresh, and they’re united by scrumptious love. Take them with you when you travel or meet up with friends – these are very sociable biscuits that love the hustle and bustle. Naturally they go perfectly with a handful of nuts or a banana, but they’re also delicious on their own.

Coconut Valley

Coconut seems like an ordinary guy but he’s actually a creative genius and it’ll rub off on you. Beneath his sweet surface is an inner Casanova – the first time you try one you’ll be hooked forever. Give him a go and he’ll ask you to take him to inspiring places where he can hang out with caviar, truffles and champagne, but he’s also delicious just as he is, alone and at one with you. This biscuit doesn’t need dressing up because it tastes great, which is what really matters.

Olive Party

What does the Mediterranean taste of? Of a bunch of olives having a siesta in a natural, tasty cracker. They’re the tranquillity and joy of the allotment, and you can eat them up a tree or on a yacht. This is a cracker to liven things up: eat it with some Spanish ham or cured cheese and a glass of red wine and you’ll be able to reach the sky.
